Ingredients

  • 1 can chickpeas, rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, sliced
  • 1/4 cup feta, optional
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley

Instructions

  1. Combine chickpeas, cucumber, tomatoes, onion, and feta in a large bowl.
  2. Whisk olive oil, lemon juice, salt, and pepper.
  3. Pour dressing over the salad and toss gently.
  4. Top with parsley and enjoy.
